Chef-to-Chef Local Food Learning Days

The Heartland Food Network is devoted to providing restaurant owners, executive chefs, kitchen staff, waitstaff and related professionals in food service the tools needed to use and promote local food in their establishments.

HFN has received funding from the USDA Specialty Crop Block Grant Program and the Minnesota Department of Agriculture Minnesota Grown Program to host training and technical assistance workshops for chefs and restaurant owners in Minnesota.

If you are a food service professional, please join us for this great event! This professional development training is meant to provide all the necessary steps to help you begin successfully using local food in your establishment. Not only will you leave with a resource packet including a list of farmers interested in selling to restaurants, sample menus, sample spreadsheets for tracking local purchases, and more, this event will be a great chance to connect with other chefs in Minnesota.

Topics for the day will include:

  • Working with farmers
    • Working with seasonal foods: what grows in Minnesota, sample dishes, menu planning
    • Buying local foods on a budget
    • Building support for local food with management and wait staff
    • Marketing your use of local food to your customers
    • Menu design and signage- sample menus will be provided 
    • Regulations and rules about using local food
    • Working with distributors who source local

Who should come?

  • Chefs and restaurant owners who want to start using local food, but have questions about getting started
  • Any food service professional who wants tools that will help them integrate local food into their menu

Speakers at trainings will include:

  • Chefs from Lucia’s Restaurant, the Birchwood Café, the Corner Table, the Craftsman Restaurant, Sen Yai Sen Lek Thai, and more will discuss tips and their experiences
  • Minnesota Department of Agriculture employees will address food regulations and laws
  • Greg Reynolds of Riverbend Farms will discuss working with farmers
  • Distributors that sell local foods to restaurants (Co-Op Partners Warehouse, Hidden Streams Farm, others) will present the option of purchasing food through a local food aggregator
  • Representatives from Bon Appetit Management Company will address working with local foods on a budget
